Welcome to the first-ever edition of Zella’s Kitchen. We are excited for you to be joining us on this adventure!
Recipe #1: Garlic Sriracha Noodles
The first recipe we want to share with you is one of our go-to recipes. We love to make this recipe because it is delicious and very simple to make. We make it so often and never get tired of it. Seriously, almost every week or so.
The recipe calls for the use of broccolini, but we can never find that at the grocery store so we just replace it with broccoli and it works like a charm.
If you are also wondering wtf nooch is, it’s nutritional yeast. It has a sort of cheesy flavor and makes it creamy. You can find it in the health food section of your grocery store. It looks like little cheese flakes. We have also made the recipe without the nooch and it turned out perfectly fine!
Recipe #2: Summer Tomato Risotto Saffron
This recipe is absolutely amazing. It does take a while to make, especially compared to the recipe above, so we think it is a good recipe to make when you have a bit more time. Saffron does tend to be an expensive ingredient, but we believe that it is worth it. We also added the shrimp mentioned in the recipe, and it made it to die for.
I’m sure that Gordon Ramsay would have been offended by our risotto, but we were proud of it.

There is no way to hide it. We f*cking love tacos. But, since we have both significantly reduced our meat intake, we decided to look for an alternative to the traditional beef taco recipe.
This recipe does an amazing job of creating great texture and taste. It is reasonably easy and quick to make. Just add the other typical ingredients you add to your tacos, like lettuce, tomatoes, salsa, and cheese and you are all set.
Recipe #4: Zucchini Noodles with Spicy Peanut Butter Sauce
It’s zucchini season right now, so you can likely find the main ingredient for this recipe on sale. This recipe is super simple and perfect for a weeknight where you have zero motivation to cook.
The recipe does not call for you to cook the zucchini, but we recommend that you do. We believe that it makes the zucchini tastier. You can cook the zucchini by either frying it in the frying pan or boiling it in water.
We also used one of those spiral tools for the zucchini rather than the tool that was used in the video. Anything you got on hand should work.
Recipe #5: One-Pot Vegan Pasta
To be honest, there’s not much to say about this recipe because it’s so simple but so delicious. If you’re looking for something fast and easy to clean, this is the recipe to go. It’s a great recipe for those longer workdays.
The cashews in this recipe help to thicken the pasta up. The recipe is simple and so delicious.
Zella’s Pick of the Litter
As a part of this newsletter, we want to include more than just recipe links. We want to show you some of the cool things we have seen throughout the week. This can be either links to cool articles, great books we have read, or products we found interesting (oh, you know we will be including beers in here).
This week, Zella’s Pick of the Litter is the book “Chop Suey Nation” by Ann Hui.

Ann goes on a cross-country trip of Canada visiting “fake Chinese” restaurants. She tells the stories of these restaurant owners and how they came to own these “fake Chinese” restaurants. In between telling the stories of these restaurant owners, she weaves in the story of her family and her own parent’s immigration story.
If you ever wondered how these Chinese restaurants popped up in small towns, along with finding out more information about how Canada poorly treated Chinese immigrants when they first arrived in Canada, this is the book for you. We could not put it down. Vanessa nagged Malcolm to read it for over a year and he read it in under a week.
